We invented our own special recipe and have perfected it over the years.

We use a blended combination of apple and cherry wood smoke in our process, giving it not only a unique sweeter flavor, but a richer red coloring.  We have a variety of different flavors (REGULAR - brown sugar, LEMON PEPPER, CAJUN, and GARLIC PEPPER).

We provide a high quality product and do not use any artificial colors.

We have been serving the needs of local stores and businesses since 1992.

We are State Inspected and have been HACCP (Hazard Analysis Critical Control Point) certified.

Our fish is smoked with a commercial grade smoker and then packaged with a commercial vacuum packer.  Our CUTS (one piece - approximately 1/2 pound) are packed in gold foil vacuum pouches and are perfect for retail sales and our PACKS are bulk packaged in a clear vacuum pouch (each containing 3-4 pieces) and are perfect for caterers, restaurants, or in the preparation of spread, pate, or soups.  We also provide custom size packages to your specific needs.

We do a hot-smoked process that is fully cooked and although it is vacuum-sealed,
it still requires refrigeration at all times !
