My family has been in the Salmon
business for 40 years, purchasing and processing Salmon in Egegik, Alaska during the
Summer Salmon runs.
I opened my own Fish Cannery in 1987 in Alaska and faced with left over Salmon and no
buyer, I made a decision to keep it and send it to Washington, where I live, to sell it
myself.
A friend brought it to my attention how difficult it was to get really good smoked fish.
I got interested, did extensive research, and started testing different techniques
and smokes for fish, thus starting a second business - C&H Classic Smoked Fish in
1992.

I invented my own secret recipe and have perfected it over the years using family,
friends, and associates (business and personal) to test and provide feedback. I am
sure after your first taste, you will agree it is the Better "Smoked" Salmon.
We have participated in the Smoked Seafood Competition/Conference in Seattle,
Washington and placed 3rd Place among 70 entries in 2000.
We also participated in the Alaska Symphony of Seafood and were awarded
1st place for our FISH and 2nd place for our SPREAD in 2001.
We also have participated and sold our products during the Astoria Wine & Seafood
Festival in Astoria, Oregon; Seattle Cooks Convention in Seattle,
Washington; and Bite of Seaside in Seaside, Oregon. We also
attend the Bite of Seattle Festival in Seattle, Washington.
C&H Classic Smoked Fish is a small, independently-owned smokehouse located on Puget
Island, which is actually in the middle of the Mighty Columbia River between
Washington and Oregon. We are considered a part of Cathlamet, Washington.

We have been serving the needs of local stores and businesses since 1992. We are
State Inspected and HACCP (Hazard Analysis Critical Control Point) certified. Our
fish is smoked in a commercial smoker and then packaged with a commercial vacuum
packer.
Our CUTS (one piece - approximately 1/2 lb.) are packaged in gold foil vacuum pouches and
are perfect for retail sales and our PACKS are bulk packaged in a clear vacuum pouch each
containing 3-4 pieces which are perfect for caterers or restaurants. Our products
are also be used in the preparation of spreads, pate, or soups. They are shipped in
10 lb. boxes (case). One case would be approximately 10-11 lbs. of product.
Delivery details can be arranged to fit your requirements.
We are more than willing to custom size for your needs.
We do a hot smoked process that is fully cooked and although it is vacuum sealed, it needs
to be refrigerated.
We offer two different smokes (Cherry or Applewood) and a variety of different flavors
(REGULAR-brown sugar, LEMON PEPPER, CAJUN, and GARLIC).
Having a high quality product is very important to us, therefore we do not use
any artificial colors.
